Hi Friends.
I wanted to share a beloved scone recipe that I have used again and again. I'm not really sure where the recipe originated, but I know that it is amazing. Yum-zilla. You should make them. I make at least a batch a week. You think I am joking?! Ha! I WISH I was joking. Too many scones for me. All I know is that now that I am sitting on the couch, eating the finished product, I am quite satisfied. Yum-zilla x2.
Ok. To begin.
Measure out 2 1/2 cups of flours. {I used 2 cups white flour & 1/2 cup whole wheat flour. I don't use all wheat flour, 'cause that would be too healthy.}
Actually, I have to confess. That is not how I began. First, I made a batch of pico de gallo... and ate a half a bag of torilla chips.
oh dear. Do not follow my example. But boy, was it good. And I will have a happy propane man when he gets home.
After I made the pico de gallo, I turned on LOST on netflix. Are you a LOST fan? Oh my, I LOOOOVE it. Well, not how it ended. I dislike the ending, however, I Love it until the final episode.
Ok, so you measured out the 2 1/2 cups of flour.
NEXT, measure out 1/3 cup sugar, 1 Tbsp baking powder, 1/2 tsp salt. Add it to the flour. {I also add a scoop of brown sugar and a little bit of cinnamon. Because why not, really?}
Next, Cut in a cold stick of butter.
Measure out 3/4 cup of heavy whipping cream. Ok, so I used half & half. Either way. Ya know, whatever.
Next, whisk one egg with the cream until you get the palest color of yellow. pretty.
Sometimes, I add a dollop of sour cream, just to make the scones moist. You can if you want. Maybe you're not into moist scones. I won't judge.
Then mix the wet ingredients with the dry ingredients. Now for the chocolate chips!!!
I am now going to share one of my obsessions. Jars.
Jars, you say? How boring. Who loves jars? ME, ME! I love to keep stuff in jars. Their reusable. Airtight. No bugs can get in them. Classic. And currently, I have two jars of chocolate chips. Pure joy!
Also, since my pantry consists of one cupboard in my kitchen, jars are space saving. I'm just sayin'.
Ok, so I added in some choc. chips. I can't really tell you how many because I don't know. I eyeball it.
And then I kneaded it together until it gets kinda sticky.
Then I put it on a floured board, and knead it some more. Until it's not so sticky.
Use a rolling pin and roll it out until it is about 12 inches in diameter.
Then I put it on a greased baking sheet and score the top of the dough with a knife.
Bake for 23 to 25 mins. at 400 Degrees.
And this is the final product.
Yumzilla, right?
Mrs. Scone-Gobbler's Chocolate Chip Scones.
2 1/2 cup flour
1/3 cup sugar
1 Tbsp. baking powder
1/2 tsp. salt
1 stick cold butter
3/4 cup whipping cream
1 egg
choc. chips (ya know, whatever looks right to you)
Mix flour, sugar, baking powder & salt
Cut in butter
Beat egg & cream; add to flour; knead until not sticky
Bake for 23-25 mins at 400 degrees.

I just watched the episode in Season 1 where Boone & Locke find the little airplane in the jungle full of heroine. Boone falls and is really injured. Jack tries to save him, by giving him a blood transfusion. Jack is always trying to save everyone, even to his own demise. Jack gets this wild look in his eye and you know he is close to doing something extreme. This happens every three episodes or so. Jack ends up collapsing from exhaustion after attacking Locke, calling him a murderer. Oh yeah, and Claire had Aaron in the jungle. Makes you want to watch it, huh? Really, you should. Season 1 is so good.
